Paleo Blueberry Muffins and Snowmobiling
What do Paleo Blueberry Muffins have to do with snowmobiling?
There are three things I think about when someone says Maine; blueberries, Cold River Gin and snowmobiling because that’s the reason I have spent the most time there. Truth be told, there are lot’s of other awesome things in, and from, Maine- hello lobster!
Since I’m in the truck for 4 hours with the kids as Matt drives us all home from the last snowmobile trip of the season (sad face), I thought I’d post the recipe for my mother’s awesome grain free, gluten free blueberry muffins.
My mother is an amazing cook and my first mentor in the kitchen. Her paleo muffins do not disappoint, the only downside is that it’s hard to eat just one. I hope you try this recipe and I hope you love it as much as I do.
These muffins keep best in the refrigerator and will hold for a week (longer in the freezer). They are delicious sliced in half and warmed in the toaster oven.
Another great healthy muffin recipe (gluten free but not Paleo or grain free) is Banana Bread Protein Muffins
Ingredients
- 2 cups blanched almond flour
- 1/3 c tapioca flour
- 1/4 c flaxseed meal
- ½ teaspoon sea salt
- 2 teaspoons baking powder
- ¼ c. pure maple syrup
- 1/2 teaspoon pure vanilla extract
- 3 large eggs
- ¼ cup organic coconut oil melted
- 1 1/2 tsp fresh organic lemon zest
- 2 cups fresh blueberries
Instructions

Pre heat oven to 350 degrees

Mix dry ingredients.

Add beaten eggs, maple syrup, oil, vanilla extract and stir well.

Stir in blueberries and zest.

Spoon into paper lined muffin tin and bake. approx. 20-25 minutes
Recipe Notes
Apple Cranberry variation: omit vanilla, lemon zest and blueberries. Substitute 1 tsp cinnamon, one large apple diced and fresh or frozen cranberries to total 2 cups fruit.
