Tex – Mex Quinoa

This easy flavor packed Tex-Mex side starts with basic cooked quinoa and makes a great base for burrito bowls or chili and is delicious as a side with roasted veggies or meat. You can use store bought taco seasoning or make your own using this recipe.

Ingredients
  

  • 3 cup cooked quinoa cooked in chicken or veggie broth
  • 1 ea lime zest and juice
  • 2 tsp taco seasoning
  • 1/4 cup fresh cilantro leaves
  • 3 tbsp tomato sauce
  • salt to taste

Instructions
 

  • Finely chop the cilantro and in a large bowl add it to the lime juice, zest, tomato sauce and cilantro. Mix well.
  • Add the cooked quinoa to the bowl and mix well. Add salt to taste if needed

Taco Seasoning

This is a great seasoning for everything from tacos to tex- mex quinoa, rice, steak, chicken pork...pretty much anything. You can adjust the heat to your liking by adding extra chili powder, cayenne or chipotle chili powder.

Ingredients
  

  • 4 tbsp. chili powder
  • 4 tbsp. ground cumin
  • 2 tbsp. smoked paprika
  • 2 tbsp. ground coriander
  • 4 tsp. garlic powder
  • 4 tsp. onion powder
  • 2 tbsp. kosher salt cut in half if using regular or sea salt
  • 2 tsp. Black pepper
  • 2 tsp. dried oregano

Instructions
 

  • Mix all ingredients together well and store in an airtight jar.

Notes

For tacos use 2 tablespoons mix  plus 1/4 cup water per pound of ground beef.
