This easy flavor packed Tex-Mex side starts with basic cooked quinoa and makes a great base for burrito bowls or chili and is delicious as a side with roasted veggies or meat. You can use store bought taco seasoning or make your own using this recipe.
Tex Mex Quinoa
This quinoa makes a delicious base for veggie, chicken, beef or fish burrito bowls.
Ingredients
- 3 cup cooked quinoa cooked in chicken or veggie broth
- 1 ea lime zest and juice
- 2 tsp taco seasoning
- 1/4 cup fresh cilantro leaves
- 3 tbsp tomato sauce
- salt to taste
Instructions

Finely chop the cilantro and in a large bowl add it to the lime juice, zest, tomato sauce and cilantro. Mix well.

Add the cooked quinoa to the bowl and mix well. Add salt to taste if needed
Taco Seasoning
This is a great seasoning for everything from tacos to tex- mex quinoa, rice, steak, chicken pork...pretty much anything. You can adjust the heat to your liking by adding extra chili powder, cayenne or chipotle chili powder.
Ingredients
- 4 tbsp. chili powder
- 4 tbsp. ground cumin
- 2 tbsp. smoked paprika
- 2 tbsp. ground coriander
- 4 tsp. garlic powder
- 4 tsp. onion powder
- 2 tbsp. kosher salt cut in half if using regular or sea salt
- 2 tsp. Black pepper
- 2 tsp. dried oregano

Mix all ingredients together well and store in an airtight jar.
Recipe Notes
For tacos use 2 tablespoons mix plus 1/4 cup water per pound of ground beef.
