Protein Energy Bites

Ingredients
Filling
- 250 grams pitted dates chopped up
- 250 grams raw cashews can sub almond flour or seed flour
- 2 tablespoons maple syrup
- 1/2 tsp salt
- 50 g vanilla protein powder I use The Dr & The Chef Grass Fed Whey
- 1 teaspoon vanilla extract
- 2-4 tablespoons water as needed
- 1 tsp vanilla extract
Optional Coatings
- 224 g dark chocolate chips – I like Choc Zero or Lilys melted with 5 grams coconut oil
- toasted coconut shreds
- Toasted pecans – finely chopped
Instructions
- In a food processor, add the cashews and process until they form fine crumbs or a cashew meal consistency.
- Add the chopped dates, maple syrup, and salt to the cashew meal. Process until the mixture becomes a thick, smooth dough. If needed, add a small amount of the water (one tablespoon at a time) to help everything blend together.
- Once the dough is smooth, add the protein powder and process again. If the mixture is too dry, add a little more water, but be careful not to add too much. The dough should be very thick and able to hold its shape when rolled into balls.
- Using a heaping tablespoon of dough per bite, roll the mixture into approximately 24 balls.
- After forming the balls, you can dip them in melted chocolate or roll them in crushed nuts or coconut for extra texture and flavor.
- Let the bites set and enjoy!
- These make about 24 energy bites, perfect for a quick snack or post-workout treat!
- Store the energy bites in an airtight container in the fridge for up to 2 weeks or in the freezer for longer storage.
