Instructions
In a food processor, add the cashews and process until they form fine crumbs or a cashew meal consistency.
Add the chopped dates, maple syrup, vanilla and salt to the cashew meal. Process until the mixture becomes a thick, smooth dough. If needed, add a small amount of the water (one tablespoon at a time) to help everything blend together.
Once the dough is smooth, add the protein powder and process again. If the mixture is too dry, add a little more water, but be careful not to add too much. The dough should be very thick and able to hold its shape when rolled into balls.
Using a heaping tablespoon of dough per bite, roll the mixture into approximately 24 balls.
After forming the balls, you can dip them in melted chocolate or roll them in crushed nuts or coconut for extra texture and flavor.
