Spaghetti Squash with Meatballs

Did you know that you get longer strands if you cut spaghetti squash horizontally instead of vertically? It’s true, due to the way that the strands grow.

For years I, like most people, cut my squash the long way and roasted it in the oven which takes about 40 minutes. This microwave hack cuts the cooking time down to 10-15 minutes depending on the size of your squash. I usually do a total of 10 min for a small squash and 14 for a medium sized squash. Be careful cutting it after because it will be very hot inside.  This method yields perfectly cooked, not too wet or mushy, strands of squash. My favorite way to eat it is topped with my Quick Tomato Sauce, sometimes I add meatballs or grilled chicken. It’s also great with Pesto or just a little olive oil and parmesan.
