Gluten Free Cinnamon Roll Muffins with Cinnamon Swirl

If you love cinnamon rolls but want something easier to make, these gluten free cinnamon roll muffins give you all that buttery cinnamon-sugar flavor in a soft, tender muffin topped with vanilla icing.

And these have one very important feature: there is actually cinnamon swirl throughout the muffin.

I created this recipe as part of my Cinnamon Roll-Inspired Recipe Week on Instagram. I asked everyone which cinnamon roll-inspired recipe they wanted me to make first, and cinnamon roll muffins won the vote.

I had also recently seen the viral gluten-free cinnamon roll muffins created by Chef Bae in collaboration with Levain Bakery. They looked delicious, but one comment I kept seeing from people who tried them was that the cinnamon filling wasn’t always distributed throughout the muffin. Some people ended up with one larger pocket of cinnamon filling in the center—or even off to one side.

As a pastry chef, that immediately made me want to figure out a way to get cinnamon sugar in every bite.

So that’s exactly what I did.

The Secret to Getting Cinnamon Swirl Throughout the Muffin

Instead of simply adding a spoonful of cinnamon filling to the middle of the batter, I layer these muffins.

First, some of the muffin batter goes into the pan. Then I pipe a generous swirl of cinnamon filling over it before adding the remaining muffin batter.

Another cinnamon swirl goes across the top.

That layering creates ribbons of buttery cinnamon sugar throughout the muffin instead of one isolated pocket of filling.

You can spoon the filling into the muffins and swirl it with a knife if you don’t want to use a pastry bag, but piping it gives you the most defined swirl.

And don’t worry – you don’t need a pastry tip.

I simply put the filling into a pastry bag, cut off the end, and warm the bag briefly in the microwave so the filling becomes soft enough to pipe. If it starts to firm up while you’re assembling the muffins, you can warm it again for a few seconds.

What Do Gluten Free Cinnamon Roll Muffins Taste Like?

Think of these as the best parts of a cinnamon roll combined with a bakery-style muffin.

The muffin itself is soft, buttery, and tender. Inside are generous ribbons of brown sugar and cinnamon, and the top gets another cinnamon swirl before baking.

Then everything gets finished with a simple vanilla icing.

You get the cinnamon-roll experience without making yeast dough, waiting for dough to rise, rolling anything out, or cutting individual cinnamon rolls.

They also passed the ultimate test in my house.

I made a batch of 12 in the evening. When I got up the next morning, seven muffins were already gone.

I’m the only person in my family who eats gluten-free, so those muffins were eaten by my non-gluten-free young adult kids.

That’s always one of my favorite tests for a gluten-free recipe. I want something that everyone wants to eat, regardless of whether they need to eat gluten-free.

These definitely passed.

The Best Gluten Free Flour for Cinnamon Roll Muffins

This recipe is designed to work with a gluten-free 1-to-1 flour blend, so you don’t need to make a complicated custom flour mixture.

Different flour blends absorb liquid slightly differently, so you may notice small differences in the final texture from one brand to another.

Why Room-Temperature Ingredients Matter

One of the small details that makes a big difference in this recipe is using room-temperature milk and eggs.

Your melted butter is warm and fluid. If you combine it with very cold milk or eggs, the temperature change can cause the butter to begin firming up before it is evenly incorporated into the batter.

That can affect the texture of the finished muffins.

For the best results, bring your milk and eggs to room temperature before you begin.

Don’t Skip the Batter Rest

The muffin batter rests for 30 minutes before baking.

Gluten-free flours need time to absorb moisture. Giving the batter that resting period allows the flour blend to hydrate before the muffins go into the oven, which helps create a better final texture.

Use that time to preheat your oven and prepare the cinnamon filling.

Can I Make These Dairy-Free?

You can substitute your preferred dairy-free milk for the milk in the muffin batter.

For the icing, use a dairy-free heavy cream substitute or plant-based milk.

You’ll also need to replace the butter with a dairy-free butter that you already know performs well in baking.

As with any substitutions, the exact texture can vary depending on the products you use.

How Should I Store Gluten Free Cinnamon Roll Muffins?

Store leftover muffins in an airtight container.

If you plan to keep them longer, these muffins can also be frozen. For best results, freeze them well wrapped and thaw as needed.

A quick warm-up before serving brings back that soft muffin texture and makes the cinnamon filling especially good.

Ingredients
  

Muffin Batter

Dry Ingredients

  • 300 grams gluten-free 1-to-1 flour blend
  • 226 grams granulated sugar
  • teaspoons baking powder
  • ¾ teaspoon salt

Wet Ingredients

  • 226 grams milk **room temperature**
  • 2 large eggs (100 grams total) **room temperature**
  • 112 grams unsalted butter melted
  • 1 teaspoon vanilla extract
  • ⅛ -¼ teaspoon lemon extract optional but recommended

Cinnamon Roll Filling

  • 65 grams unsalted butter melted
  • 170 grams light brown sugar or maple sugar
  • 2 tablespoons gluten-free 1-to-1 flour blend
  • 2 tablespoons ground cinnamon

Vanilla Icing

  • 150 grams powdered sugar
  • 60 grams heavy cream non-dairy cream substitute, or plant-based milk
  • 1 teaspoon vanilla bean paste or 1½ teaspoons vanilla extract

Instructions
 

Make the Muffin Batter

  • In a large bowl, whisk together the gluten-free flour, granulated sugar, baking powder, and salt until thoroughly combined and any clumps have been broken up.
  • In a separate bowl or large measuring cup, whisk together the **room-temperature milk and eggs**, melted butter, vanilla extract, and optional lemon extract.
  • **Important:** The milk and eggs should be at room temperature before mixing the batter. If they are cold at all it will effect the final texture.
  • Pour the wet ingredients into the dry ingredients and mix just until well combined.
  • Set the batter aside to rest for **30 minutes**.
  • While the batter rests, preheat the oven to **400°F** and make the cinnamon filling.

Make the Cinnamon Roll Filling

  • Combine the melted butter, brown or maple sugar, gluten-free flour, and cinnamon. Mix until thoroughly combined.
  • For the most defined cinnamon swirl, transfer the filling to a pastry bag without a tip. Cut an opening in the end of the bag.
  • Just before piping, microwave the filled pastry bag for approximately **10–15 seconds**, or until the filling is slightly softened and fluid enough to pipe easily. If the filling begins to firm up while assembling the muffins, warm it again briefly as needed.

Assemble the Muffins

  • Divide a little less than half of the muffin batter among **12 muffin cups**.
  • Pipe a generous swirl of cinnamon filling over the batter in each cup.
  • Divide the remaining muffin batter among the cups, covering the cinnamon filling. Gently smooth the batter so that it reaches the edges of each muffin cup.
  • Pipe another swirl of cinnamon filling over the top of each muffin. Gently press the filling slightly into the surface of the batter so the swirl becomes part of the top of the muffin as it bakes.
  • **Alternate method:** If you don’t want to use a pastry bag, spoon the cinnamon filling over the batter and swirl it gently with a knife. The cinnamon swirl will be a little less pronounced, but the muffins will still be delicious.

Bake

  • Place the muffins into the preheated **400°F oven and immediately reduce the temperature to 375°F**.
  • Bake for **15 minutes**.
  • Rotate the muffin pan and continue baking for approximately **10 minutes**, for a total baking time of about **25 minutes**.
  • The muffins are done when they are just beginning to turn lightly golden, spring back when gently touched, and a cake tester inserted into the muffin portion comes out clean.
  • Cool the muffins in the pan for **5 minutes**, then transfer them to a cooling rack.

Make the Vanilla Icing

  • Whisk together the powdered sugar, heavy cream or substitute, and vanilla bean paste or vanilla extract until smooth.
  • Drizzle or spread the icing over the cinnamon roll muffins. Serve slightly warm or allow the icing to set before serving.
