Mix dry ingredients.
Add beaten eggs, maple syrup, oil, vanilla extract and stir well.
Stir in blueberries and zest.
Spoon into paper lined muffin tin and bake. approx. 20-25 minutes
Apple Cranberry variation: omit vanilla, lemon zest and blueberries. Substitute 1 tsp cinnamon, one large apple diced and fresh or frozen cranberries to total 2 cups fruit.
