A fun project to make with friends or with your kids. Fortune cookies are easy to make but they are a bit time consuming because you can only bake two at a time or they will cool before you can shape them.
In the bowl of a stand mixer, beat the butter, honey, sesame oil, vanilla extract, almond extract and salt, on medium speed, until light and fluffy.
Cover the batter and refrigerate for 1 hour.
Spread 1 tablespoon batter over each circle (as evenly as possible). Bake in the center of the oven 7-9 minutes or until lightly browned.
Let cool for 10 seconds, then using a thin off set spatula, invert one cookie and place a paper fortune in the center. Fold cookie in half over fortune strip so the edges meet; hold edges together for a few seconds. Place center of cookie over the rim of a measuring cup/glass; gently press ends down to bend cookie in middle. Set the fortune cookie in a muffin cup to hold its shape. Repeat with the second cookie. If the cookie hardens, return it to the oven for a few seconds. Repeat with the remaining batter and fortunes. Let the cookies cool completely before decorating or storing.
