This brownie recipe was a favorite with customers at my first bakery in Sturbridge Massachusetts; The Sturbridge Baking Company.
Dense and chewy with rich chocolate flavor. If you are a fan of chewy brownies these ones are for you. Because these brownies rely on cocoa powder for most of their chocolate flavor make sure you use a high quality cocoa. If you are using supermarket cocoa powder I recommend Hershey’s Special Dark.
Sturbridge Baking Company Brownies
- 3/4 Cup cocoa powder
- 1/2 tbsp. baking soda
- 2/3 Cup butter melted
- ½ Cup boiling Water or hot coffee
- 2 Cups sugar
- 2 eggs
- 1 1/3 Cups all purpose flour
- 1 tbsp. pure vanilla extract
- ¼ tbsp. salt
- 1 Cup chocolate chips optional
Heat oven to 350°F. Grease 13x9x2-inch baking pan.
Sift or whisk together cocoa and baking soda in large bowl; stir in half of the melted butter. Add boiling water (or coffee); stir until mixture is thick and smooth.
Stir in sugar, eggs and remaining melted butter; stir until smooth.
Add flour, vanilla and salt; stir until completely combined. Stir in chocolate chips. Pour into prepared pan.
Bake 35 to 40 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack.
