These rich, delicious, intensely chocolaty, Paleo(ish) brownies are packed with nutritional goodness from raw cacao, coconut oil, maple syrup and almond flour. This is one decadent treat you can feel good about eating and they are naturally gluten free. The texture is on the cakey side but will get fudgier if they are refrigerated overnight. If you really want to take your dessert over the top add some Paleo chocolate sauce for a truly indulgent experience.
Ingredients
- 3/4 cup raw cacao powder
- 1/2 tsp baking soda
- 2/3 cup coconut oil melted
- 1/2 cup boiling water
- 1 cup raw coconut sugar
- 1 cup pure maple syrup
- 2 eggs
- 2/3 cup almond flour
- 2/3 cup cassava flour
- 1/4 tsp sea salt
- 1 tsp vanilla seed paste or pure vanilla extract
- 1 cup lily's or know better dark chocolate chips optional

Heat oven to 350°F. Grease 13x9x2-inch baking pan.

Sift or whisk together cacao and baking soda in large bowl; stir in half of the melted coconut oil. Add boiling water; stir until mixture thickens.

Stir in the coconut sugar, eggs, remaining melted coconut oil and maple syrup; stir until smooth.

Add the flours, vanilla and salt; blend completely. If using, stir in chocolate chips. Pour into prepared pan.

3. Bake 25-30minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. If you like a fudgy brownie, refrigerate the overnight.
